In many documentation, including core/data/System/DefaultPreferences.txt, overwrite is often used when override should be.

Overwrite should only be used for files, while override is better for preferences values, etc...

As agreed by English speaking people on #foswiki

I fixed this one as I was doing doc work anyway

Also fixed the extensions I have been working on earlier.
